One Tuesday afternoon, I was craving something that felt both indulgent and genuinely good for me—and that's when this salad bowl came together almost by accident. I had marinated chicken from dinner plans that fell through, a fridge full of vegetables, and a jar of tahini that had been sitting there waiting for the right moment. The result was so bright and satisfying that I've been making it ever since, adjusting the spice blend based on my mood and whatever produce looks best at the market.

I made this for my sister when she was visiting and mentioned she'd been eating the same sad desk salads for weeks. Watching her face light up as she tasted that first forkful of warm chicken with the tangy tahini sauce reminded me that simple, thoughtful food is often exactly what people need. She's now made it at least a dozen times and keeps sending me photos of her bowl variations.

Ingredients

  • Boneless, skinless chicken breasts or thighs (450 g): Thighs stay more juicy during cooking, but breasts work beautifully if you don't overcook them—slice them thin so they absorb the spice blend quickly.
  • Ground cumin (1 tsp): This is the backbone of the shawarma flavor, earthy and warm without being overwhelming.
  • Ground coriander (1 tsp): It adds a subtle citrus note that makes the whole spice blend sing together.
  • Smoked paprika (1 tsp): Use the good stuff if you can—it brings a gentle smokiness that makes you feel like the chicken came off an open flame.
  • Ground turmeric (1/2 tsp): Beyond the golden color, it brings an almost mineral earthiness that anchors the brighter spices.
  • Ground cinnamon (1/2 tsp): Just enough to add warmth without tasting like dessert, trust me on this.
  • Garlic powder and onion powder (1/2 tsp each): They ensure the spice coating clings to the chicken and dissolves into every bite.
  • Cayenne pepper (1/4 tsp, optional): Leave it out if you prefer gentler heat, or add more if you love that slow burn.
  • Salt and black pepper: Season generously—this is your base layer of flavor.
  • Mixed salad greens (120 g): Whatever you prefer works, but peppery arugula or tender spinach adds character.
  • Fresh vegetables (cucumber, cherry tomatoes, red onion, carrot, bell pepper): Cut them into varied sizes so the bowl feels textured and interesting to eat.
  • Kalamata olives (60 g): The briny saltiness cuts through the richness of the tahini beautifully.
  • Avocado: Add this just before serving or it'll turn an unappealing shade of brown.
  • Tahini (60 g): Make sure it's fresh and well-stirred before measuring, or you'll end up with a paste that's impossible to work with.
  • Fresh lemon juice (3 tbsp plus 1/2 lemon's worth): Bottled works in a pinch, but fresh lemon makes such a difference in brightness.
  • Olive oil (3 tbsp total): Use something you actually enjoy tasting, not the cheapest bottle.
  • Minced garlic (1 small clove): Raw garlic in the tahini drizzle adds a sharp, fresh note—don't skip it.
  • Honey or maple syrup (1 tsp, optional): A tiny bit of sweetness balances the lemon and tahini beautifully.

Instructions

Build your spice blend:
In a medium bowl, whisk together the olive oil with all the warm spices, salt, pepper, and lemon juice until it looks like a fragrant paste. This is where the magic happens—the oil carries those flavors right into the chicken, so don't rush this step.
Coat and marinate the chicken:
Toss your sliced chicken in the spice mixture, making sure every piece gets coated. If you have time, let it sit for 15 minutes, but even 5 minutes of contact makes a difference—and if you can wait up to 2 hours, the flavors deepen noticeably.
Cook the chicken with confidence:
Heat your skillet or grill pan until it's properly hot (you want an immediate sizzle when the chicken hits the surface), then cook for about 5-6 minutes per side until the edges are golden and the chicken is cooked through. Let it rest for a few minutes after cooking—this keeps it tender rather than stringy.
Make the lemon tahini drizzle:
Whisk tahini, lemon juice, water, olive oil, minced garlic, salt, cumin, and honey together until it reaches a consistency you can drizzle. Start with 2 tablespoons of water and add more gradually—tahini can go from creamy to pourable quickly, and you want control over that moment.
Assemble your bowls:
Layer your greens first, then arrange the vegetables in whatever way feels visually appealing to you. The arrangement doesn't have to be perfect; it just needs to look intentional.
Top and serve:
Place warm chicken slices on top of each bowl, drizzle generously with the lemon tahini sauce, and serve immediately while the chicken is still warm—the heat creates a beautiful contrast with the cool vegetables.

The Spice Profile Explained

The beauty of traditional shawarma spices is that they work together rather than competing for attention. Cumin and coriander form the warm foundation, paprika adds gentle color and smokiness, while turmeric and cinnamon create depth without taking over. Garlic powder and onion powder act like invisible teammates, making sure the seasoning clings to the chicken and doesn't just sit on the surface. The first time I made this, I thought the cinnamon might be a mistake, but it's actually what keeps everything from tasting one-dimensional.

Customizing Your Bowl

The structure of this bowl is forgiving enough that you can riff on it based on what's in your kitchen. Some days I add crispy chickpeas for extra protein and crunch. Other times I'll throw in some thinly sliced red cabbage for a bright crunch that lasts through the whole bowl. The vegetables don't have to be fancy—sometimes plain lettuce, tomato, cucumber, and carrot are exactly what you need. You could also warm some cooked quinoa or brown rice in the bowl before adding vegetables if you want something more filling, though honestly, the chicken and tahini drizzle provide enough substance on their own.

Making It Work For Every Diet

This recipe is already gluten-free and dairy-free as written, which makes it naturally accommodating to a lot of different dietary needs. If you're serving vegetarians or vegans, grilled tofu takes the place of chicken beautifully—just press it first to remove excess moisture, coat it in the same spice blend, and give it a few minutes per side in the pan until it's golden at the edges. Chickpeas work wonderfully too if you toast them with the spice blend first. The lemon tahini drizzle remains exactly the same, which means everyone at the table can have essentially the same bowl with just that one swap.

  • Press tofu between paper towels for at least 15 minutes before marinating so it actually absorbs the spice flavors.
  • If you're making this for someone with a sesame allergy, swap the tahini for a sunflower seed butter and add a touch of extra lemon juice for tartness.
  • The tahini drizzle can be made ahead and kept in the refrigerator for up to 5 days, so there's no excuse not to make this on a busy weeknight.

Rezept FAQ

Welche Beilagen passen gut dazu?
